Black Bean and Sweet Potato Spring Medley

It's that transitional time of the year when the weather is a mix of wintry wetness and the oncoming of Spring.

The successful attire is all about layering and training is beginning to move from strength to foundational building. My body still craves warmer foods, but is also hinting at some lighter and fresh offerings. So, to go along with this transition I put together this recipe.

Black Bean, Sweet Potato, and Spinach Spring Medley Serves 4

Ingredients :

  • 1 Cup of Black Beans, sorted, soaked, and cooked preferably (or substitute with 1-2 cans)
  • 1 Bay Leaf
  • 2 Cloves Garlic, chopped
  • 1 Large Sweet Potato, cubed
  • 1 Medium Onion, chopped
  • 2 Cloves Garlic, chopped
  • 2 Carrots, chopped
  • 2 Celery Stalks, chopped
  • 1/2 Cup Peas, fresh or frozen
  • 1/2 Cup Corn, fresh or frozen
  • 1 Bunch Asparagus, cut into 1/4" pieces
  • 4 Handfuls Spinach, fresh
  • 1 Cup Vegetable or Chicken Stock or water
  • 1/2 Parsley, chopped
  • Juice from 1Lime
  • Chopped Avocado (optional)
  • Sea Salt
  • Olive Oil

I like to cook beans because all they require is time, hold really well for leftovers, and are so easy to prepare. To do so: (all of this can be substituted with canned beans)

  • Take one cup of dry Black Beans and sort through to pick out any rocks
  • Rinse Beans thoroughly in cold water
  • Soak Beans covered in water 6-12hrs or overnight in covered pot
  • Place pot on stove and bring beans to a boil while skimming off any foam. Let cook for 5mins and turn down heat to a simmer.
  • Add Bay Leaf
  • Cover and cook beans low and slow till fork tender.
  • When fork tender remove from heat and add chopped garlic
  • Set aside to cool

For Medley :

Use as many fresh spring vegetables that you can find at the farmer's market or begin to clean out your freezer of frozen veggies from the winter.

  • Heat pot over med-high heat
  • Add olive oil, onions, carrots, celery and saute for 3-5mins till onions become translucent and veggies soften.
  • Add chopped garlic, saute 2mins
  • Add cubes of sweet potato and saute till edges begin to turn brown, 5-7mins
  • Add stock or water and let simmer for 5mins
  • Add veggies and cook till tender
  • Add to black beans and mix together
  • Add salt, lime juice and parsley
  • Place one handful of spinach in bowl and top with black bean medley
