Philosophy and approach
Adam stopped cooking in restaurants because he wanted to connect more personally with the people he was feeding. The wall between the kitchen and the patrons in a restaurant prevented the relationships he wanted to create. Organic Performance’s approach to private chef work grew out of Adam’s belief that cooking is not something you do to food—it’s the relationship that you have with the ingredients and how that relationship is transferred and expressed to those who are eating and sharing the process.
Adam transforms any kitchen into the antithesis of restaurant production, making himself accessible and creating a casual, welcoming setting. In his choice of ingredients and recipes, Adam transforms traditional diets and native cuisines for today’s palette using local, organic and sustainable foods, adapted to each client’s tastes, needs and preferences.

Some of our clients, in their own words
- Mariska Hargitay: “Adam came very highly recommended, and we soon found out why. His food was fantastic, prepared with incredible care and style. Adam was also very responsive to all of our dietary needs—which were considerable at the time, as we were expecting a baby and cravings changed from day to day. He was also a pleasure to have around. We recommend him without reservation.”
- Ross Garber: “Adam possesses a tremendous talent for cooking that is complemented by his wonderful personal style. He is thoughtful, patient, wise beyond his years, a good listener, and ultimately concerned about how his preparations affect everyone at the table.”
